I held my first workshop on molecular cooking techniques in Kuala Lumpur three years ago. The enthusiasm and curiosity of my Malaysian colleagues led to a two-year teaching position at KDU College. They developed their own recipes using local produce and created the basis for their own cooking textbook. Their lecturers, Darren Teoh and Gerhard Albrecht guided them and encouraged them to explore this new approach.
