Molecular Cuisine: Traditional Recipes through a Modern Kaleidoscope
"For several years already, molecular cuisine in Europe has become the focus of a wider public. Molecular cuisine combines traditional cooking with the progress of science. What were considered inviolable laws in the culinary world until now have been challenged by chefs and scientists from different disciplines. New findings enable chefs to drive forward the development of the world's cuisines. Molecular cuisine is not just a trend; it is a cooking revolution. We molecular research-chefs worldwide are guided by nature and its scientific miracles. They challenge us again and again. The best products and preparations are key to our success in the search for the perfect, pure taste. In addition, this cuisine combines spectacle, irony and pleasure.
I held my first workshop on molecular cooking techniques in Kuala Lumpur three years ago. The enthusiasm and curiosity of my Malaysian colleagues led to a two-year teaching position at KDU College. The students shared my enthusiasm for integrating the new cooking techniques into their courses and culinary tradition. They developed their own recipes using local produce and created the basis for their own cooking textbook. Their lecturers, Darren Teoh and Gerhard Albrecht guided them and encouraged them to explore this new approach. Their experience and knowledge were also instrumental in developing this new textbook as a new reference work.
Teaching at KDU college and being part of this book makes me very proud. I look forward to a new global generation of chefs who develop and drive their cuisine forward with curiosity and thirst for knowledge." Foreword by Heiko Antoniewicz
